Yacon is a sweet-tasting root vegetable grown in South America. The sweet flavor results from a sugar called inulin. Yacon contains a sugar called inulin. Inulin is not easily digested by your body, so in effect it has almost no calories and does not cause a "sugar rush". However, you can still taste the sweetness.
