3 farm fresh eggs, separated
1 3/4 cup milk + 2 tablespoons (fresh raw goats milk works great)
2 1/4 cups fresh stone ground flour
6 tablespoons organic cornstarch
1 1/2 tablespoons aluminum-free baking powder
1 1/4 teaspoon sea salt
1 1/2 TB raw sugar
6 tablespoons organic butter, melted and cooled to room temperature
Reserve egg whites in a medium bowl. Add milk to egg yolks in large bowl and beat until just blended.
Add flour, cornstarch, baking powder, salt and sugar. Mix until smooth only (overmixing makes tough waffles). Stir in melted butter.
Beat egg whites until fluffy but not stiff. Gently fold into batter.
Bake in waffle iron on medium-high until golden brown.
