We grind pure organic Peruvian cocoa for many hours at low temperature, to release all its taste while preserving its nutrients. Then we mix with smooth-ground pure premium organic brazil nuts to make a creamy-textured spread, loaded with flavor and uplifting life energy. Xylitol is a naturally occurring sweetener which can be derived from many sources including corn husks, mushrooms and berries. We use an organic Xylitol product derived from birch sap. Xylitol is a "sugar alcohol" which is about as sweet as sucrose, but with 1/3 less calories and a much lower glycemic index. Unlike sugar, Xylitol does not ferment. Xylitol does not promote tooth decay or bacterial growth; in fact, a diet high in Xylitol has proven benefits for dental health. Xylitol can actually "starve" harmful bacteria! (Note that Rejuvenative Foods' products do not contain enough xylitol to produce this effect.)
